Carrot Chowder

This is one of my favorite meals. My dear friend Suzi gave me this recipe and I love it! My kids will eat it, but they don't appreciate it. I savor every bite!

Saute:
1 lb ground beef
1/2 tsp salt
1/2 C chopped celery
1/2 C chopped onions
1/2 C chopped bell pepper

Add:

4 C tomato juice
1 1/2 C water
1/2 tsp pepper
3 cloves garlic (minced)
1/4 tsp salt
1 tsp sugar
1/4 tsp oregano
1/4 tsp marjorum
2 1/2 C grated carrots

2 cans cream of celery soup

Bring to a boil, then simmer until carrots are tender (or cook in crock pot 4 hours). Add soup; heat, but do not boil- may curdle.

Place cubed cheddar cheese in bowls, then add hot chowder. Serve with whole wheat Ritz crackers.

Cowboy Caviar

My friend Bonnie makes this often for various functions and I love it every time! It can be a bean dip with tortilla chips, or even served over a salad. It has a lot of ingredients, but it is worth it!


Cowboy Caviar

2 tablespoons red wine vinegar
1/2 lemon (or 1 lime), juiced
1 teaspoon Tabasco sauce
1 1/2 teaspoons oil
1 clove garlic, minced
1 teaspoon cumin
1/4 teaspoon pepper
1 avacado, cubed
1 can (15 oz) black-eyed peas or black beans, drained/rinsed
1 can (11 oz) shoe-peg corn, drained
1 bunch green onions, thinly sliced
1/2 each red and yellow peppers, diced
1 cup (loosely-packed) fresh cilantro, chopped
6-8 roma tomatoes, chopped (or diced canned tomatoes)
Salt, to taste.

Mix and ingredients and serve with tortilla chips (or serve over finely shredded cabbage)
