2 tilapia fillets (I bought mine from Costco.. frozen and individually wrapped)
1/2 fresh lemon
4 tablespoons butter, melted
3 cloves garlic, finely chopped
1 teaspoon parsley chopped (or dried parsley works too)
salt and pepper
Saute the garlic and parsley in butter. Spray a baking dish with non-stick spray. Cover fish in butter/garlic/parsley. Squeeze lemon juice over. (Make sure you have more butter then lemon juice to make sure it's not to fruity!) Cook at 400 degrees for about a 1/2 hour until the fish pulls apart with a fork. Cook for half the time if using fresh fish.
Serve with rice. (My kids like the Knorr rice/pasta packets)
